Menu Planning

No matter who you are or where you live, we all have those household chores that need to be accomplished each and every week and living in an RV is no exception.  We still do laundry every week.  We still clean house and we still shop for groceries… just on a much smaller scale these days.  We are not members of either Sam’s Club or Costco, because the sheer quantity of food we would purchase is too much for our storage space or even the weight limit of the RV.


One thing I do to keep our pantry stocked and organized and to ensure I have the groceries I need for our meals each week is I have a weekly Meal Plan that I follow to keep meal planning fresh and affordable.

Here’s how I know what to plan each week:
SUNDAY:  Sandwich/Salad Sunday  -- Easy, peezy.  It’s either a sandwich or a salad.  Everything from a Rueben to a Meatball Sub, from a Cobb Salad or to a Grilled Chicken Caesar Salad make the menu each week.
MONDAY:  Meatless Monday – Yes, I make Russell eat vegetarian once per week.  Sometimes this is as easy as quesadillas or even just pancakes or stuffed Portobello mushrooms.
TUESDAY:  Souper Tuesday – Sounds just like what it is.  Soup.  Occasionally out of a can, but most times a big pot of soup/stew or chili that’s been cooking away in the crockpot all day.
WEDNESDAY:  One Pot Wonder Wednesday – Sometimes this is also in the crock pot, but can also include casseroles, or other one pot on the stove top meals, like a stir-fry.
THURSDAY:  Chicken/Turkey Thursday – Who doesn’t eat chicken at least once per week?  I do like to change it up though occasionally with Turkey, because variety is the spice of life.
FRIDAY:  Fish Friday – I love fish of all kinds and am always glad to make it.  I’ll eat anything, but Uni (sea urchin.)  It’s a texture thing for me.  YUCK!
SATURDAY:  Satisfied Saturday – This is an open book for other items such as roast, pork chops, spaghetti, steak, you name it!

Following this plan saves us time and money.  I make up our menu each week before shopping, so I know what I need, but I am also flexible.  Of course we eat the leftovers… sometimes the same week, and other times I freeze them for future meals.  We always love trying the local cuisine, but it’s always best to have a home cooked meal.
